Its name comes very likely from the Latin word finis
terrae, as It was the farthest eastern border
of the Cozii (Cottian Alps people) kingdom. Nevertheless
we shall not discard the hypothesis that the name
originated from the habit of building very small
windows, due to the municipal tax weighing on them
In the past. The stately fortifications complex
known with the name of Forte di Fenestrelle (Fortress
of Fenestelle), has now become a significant artistic
and cultural destination, which attracts International
tourism; the same applies to the Environmental
education centre of Pra Catinat, which organises
training and recreational activities. This Is evidence
of the strategic Importance that the village can
now boast. The municipality Includes 8 Inhabited
areas: Mentoulles, Depot, Chambons, Puy, Granges,
Pequerel, Champs and Ville Cloze.

Cot Valter
This studio has been working for 15 years. Cot Walter
recycles and renovates old boards to manufacture new
furniture. Also the hinges and trimmings mirror the
High Chisone valley old traditional style. Refined Intaglio
and harmonious lines characterised the furniture manufactured
by Cot Valter, which Is mainly In farmhouse style but
shows the original touch of the studio, resulting from
the reinterpreting of a completely acquired and acknowledged
tradition. Take a look at the picture to get an Idea
of the Items manufactured by the atelier: an originally
shaped sideboard out of old larch and Swiss stone pine.

Local
potatoes
They are one of the most Important Ingredients used In
these valleys. Symbol of a simple and genuine cuisine,
which takes advantage of the local products, potatoes
are used In many ways and are a main Ingredient for several
rich and genuine recipes, which have the taste of the
past. Piatlina, Bjintie, Primura, Van Gogh, etc. are the
potatoes varieties grown In the Chisone and Germanasca
Valleys. They can be cooked In different ways: fried and
then eaten with cheese, salty, boiled without skin (triffa
salá) and usually associated with cotechino sausage,
boiled with skin (triffa brouá), just mashed or
mashed and fried with garlic, onions, lard (pilot) or
other vegetables. Potatoes are also used In soups or to
make delicious omelettes, gnocchi and croquettes.
