Saras del Fen
This word comes from “seirass”, which In Latin means “made out of whey”. In fact the Saras is a traditional ricotta cheese known all over Piedmont, that Is produced In these valleys through a very special process. It Is obtained heating up the whey from vaccine, ovine and caprine milk. According to the traditional production, which Is carried out In the Germanasca and Chisone valleys, a certain amount of milk shall be added to the whey and then the cheese shall undergo a 25-30 day maturing. Finally these ovate or Irregularly cylindrical cheeses are wrapped In mountain pasture hay, their typical and unmistakable coating. Such practice Is very old and probably originated from the need to protect the cheeses during the transportation to the valley and not to make them aromatic. The delicate and tasty Saras Is usually eaten at the end of a meal, as a dessert together with blueberry or elderberry jam or honey, but can also be used to prepare delicious recipes.
